Ingredients

2/3 cup dry powdered milk
2 tsps. pumpkin pie spice
1 tsp. cinnamon
6 tsps. Splenda
6 Tbsps. Flour
1 tsp. baking soda
2 eggs or Egg Beater equivalent
1 tsp. vanilla
1 cup canned pumpkin
4 Tbsp. raisins - or other dried fruit
1/2 cup grated carrots - raw
2 Tbsp. ground flax seed - optional
Directions
Mix dry ingredients and set aside. Beat eggs and vanilla, add pumpkin, mix, add dry ingredients and mix well. Stir in carrots and raisins. Stir in flax seed if using. Spray muffin tin with cooking spray - if using paper liners, spray those as well. Divide evenly into twelve muffins. Bake at 350 degrees for 20 - 25 minutes. Enjoy! Makes 12 muffins.
