Ingredients

1 cup black beans, drained
½ cup avocado
¼ cup stong brewed coffee, cooled
¼ cup cocoa powder
¼ ghiradelli ground chocolate
1.5 tsp vanilla extract
¾ tsp baking powder
1/8 tsp baking soda
1/4 cup unrefined coconut oil, melted
1/8 tsp salt
½ cup brown sugar
¼ cup coconut sugar
2 eggs, lightly beaten
1 Ghirardelli semi-sweet chocolate bar, chopped
Tips
coconut oil can be replaced with equal parts regular oil or apple sauce and the coconut sugar can be replaced with more brown sugar, but the health benefits of both are so great I do not recommend it!
Directions
Preheat oven to 350.
Line an 8×8 inch pan with parchment paper. Set aside.
In a food processor, puree black beans, avocado, and coffee. Transfer to a large bowl.
Add remaining ingredients and mix by hand until smooth and fully combined.
Bake for 27-35 minutes, turning the pan halfway through.
When the brownies are done, test them with a toothpick. Do not over bake. Let cool completely before cutting.
