Vegan "Fried" Rice w/o oil Vegan "Fried" Rice w/o oilNumber of Servings: 4
Ingredients

2 c. brown rice, cooked
3 Tsp. Egg Replacer disolved in
3 TBS warm water
2 carrots, chopped
1 celery stalk, chopped
1 small onion, chopped
1/2 c. frozen peas
1 c. bean sprouts fresh
1 can mushrooms no salt added
2 tbs soy sauce, low soium
water (as needed)
Directions
Cook the rice according to directions on package.
Over a wok heated to high heat, add the carrots, celery, and onion. Stir fry adding water as needed until the veggies are tender-crisp.
Add the egg replacer disolved in warm water. Stir and heat through.
Add the bean sprouts, mushrooms and peas. Add the rice and soy sauce.
Mix to combine. Heat through.
Use vegetable oil spray or additional water to keep from sticking.
Makes 4 servings about 1 cup each.
