Introduction

This is an excellent sweet, spicy, healthy dish for cool fall days. Use Tilapia for high protein and mild flavor, but the recipe can be used for chicken breasts or other lean protein. Ingredients

    6 100g (3.5 oz) Tilapia fillets
    1 C. light coconut milk
    1 t. mint leaves, diced & crushed
    1 T. salt-free yellow curry spice mix
    1 t. sea salt
    1 t. powdered ginger
    2 garlic cloves, diced & crushed
    1 t. parsley flakes
    3 packets of Splenda
    1 T. lime juice (about 4 wedges, squeezed)

Tips

Add vegetables.
Serve over brown rice or Quinoa.
Use 1/2 cup of full fat coconut milk and 1/2 cup water to make your own 'light coconut milk'.
Use other types of curry powder to make this dish spicy.


Directions

Lay thawed fish filets in the bottom of a baking dish.
Mix light coconut milk and other ingredients in a bowl and pour over the fish.
Bake at 425 for 20 minutes.
