2 c. Fresh Pureed Pumpkin
2 T. Honey
1/2 c. plain yogurt
1/3 c. unsweetened Applesauce
1 egg
2 egg whites
2 T. Protein Powder
1.5 c. Oatmeal- ground into flour
1 tsp. Baking powder
1 tsp. Baking soda
1/4 tsp. Salt
1 T. Ground Cinnamon
1T. Pumpkin Pie Spice
1/4 c. Splenda
1/4 c. Chopped Dried Plums
Directions
1. Mix wet ingredients
2. Slowly add in dry ingredients
3. Fold in chopped dried plums
4. Spray muffin pan(s) with cooking spray
5 Bake for 23 minutes in a 375 degree preheated oven
