Ingredients

    1 onion,diced
    2 carrots, chopped
    1.5 cups vegetable broth
    1 28 oz cans diced tomatoes,
    2 cans black beans,
    1 cup of sliced roasted red pepper
    1 tsp ground cumin
    Salt and pepper to taste

Tips

The original recipe calles for 1 tbsp of chipotle pepper in adobe sauce, which I did not have. I'm assuming this is where the "smokey" comes from in the name. You could also drain and rinse beans to cut down on sodium (or soak beans overnight). The serving size is small purposefully as I like to have other things with my soup besides just soup.


Directions

Heat 2 tsp of oil in pot and cook onion and carrot in it for about 5 minutes.

Add black beans, tomatoes, red pepper, and vegetable broth to pot with seasonings. Simmer for about 20 minutes.
