Ingredients

    2 cans black beans, rinsed and drained
    1 pint cherry tomatoes
    1 red sweet bell pepper
    1 cucumber diced with peel
    4 chopped green onions
    3 T. fresh cilantro, chopped

    Dressing:
    3 T. Lemon juice
    2 T. olive oil
    1 garlic clove, minced
    3/4 tsp. ground cumin
    1/2 tsp. salt
    1/4 tsp. pepper

Tips

I've altered this recipe by adding cucumber, but found the original in an old issue of Country Woman. I don't have the magazine anymore so I can't credit the original author.


Directions

combine all ingredients except dressing ingredients. Combine dressing seperately, then mix well.
Add mixed dressing and mix salad well.
Chill a few hours before serving.
