Introduction

Ingredients

    1 can stewed tomatoes
    1 can lima beans
    1 can dark red kidney beans
    1 can sauerkraut
    2 medium potatoes, peeled, cut into 1 inch cubes
    2 cups chicken (or veggie, if vegetarian) broth
    2 bay leaves

Tips

If you have leftovers, remove the bay leaves before putting into the fridge. They will leave a VERY strong flavor if you leave them in, and not everyone likes that!

Also good with a dollop of sour cream (ok, since it's so low in calories to begin with!)


Directions

You can make this on the stove or in the slow cooker. If you use the slow cooker, place all ingredients in on low for 8 hours.

If you use the stove, boil potatoes and bay leaves in chicken broth and water until almost soft, add remaining ingredients, boil until potatoes are done.
