Introduction

My absolutely favourite salad! Such a great source of protein as well! I make a big batch of everything on Sunday night (using one batch of dressing but grating extra carrots and beets, etc) and enjoy it for lunch all week.

Ingredients

    Salad:
    8 cups mixed baby salad greens
    2 cups beets, grated
    2 cups carrots, grated
    2 cups chickpeas, drained
    2 cups feta cheese, crumbled
    2 cups sprouts
    1/4 cup roasted sunflower seeds

    Vinaigrette:
    1 tbsp dijon mustard
    1 tbsp honey
    1/2 tsp garlic, crushed
    1/2 tsp basil
    1 tbsp red wine vinegar
    1 tbsp balsamic vinegar
    juice & zest of one small orange (1/4 cup)
    3/4 cup safflower oil

Directions

I couldn't find red wine vinegar so for the calories I put 2 tablespoons on balsamic but it's actually 1 tbs balsamic and 1tbs red wine vinegar.
