Introduction

My family's spaghetti sauce recipe included such things as prepared sauce and seasoning packets with MSG, so I decided to try and recreate it using mostly fresh ingredients. This is the result! It tastes exactly the same, to my delight, and now I can pass the recipe down to my children without fear. Ingredients

    2 T olive oil
    2 C onions, chopped
    1 C carrots, chopped
    1 C mushrooms, minced
    6-10 cloves garlic, minced
    1 lb. ground beef
    1 bay leaf
    ¼ C fresh parsley, chopped
    3 T fresh rosemary, chopped
    3 T fresh basil, chopped
    2 T fresh oregano, chopped
    2 T fresh thyme, chopped
    3 C tomatoes, cored and chopped
    2 6-oz. cans tomato paste
    salt & pepper, TT

Tips

The original recipe had celery in it. I left it out because my boyfriend and I hate celery, but you could add 1 C of it, chopped, with the onions.

Also, you could very well do this in a slow cooker if you saute the vegetables and beef in a large frying pan before transferring everything to a slow cooker.


Directions

1. Heat olive oil in a large pot over medium-high heat. Add onions, carrots, mushrooms, and garlic and heat until fragrant. Add ground beef and herbs, and sauté until the beef is cooked. The vegetables will not be done cooking.
2. Add tomatoes, tomato paste, 4 tomato paste cans full of water, salt, and pepper. Cover, turn heat to low, and simmer for 2-6 hours.
3. Serve over pasta.

Serving Size: makes appr. 8 1/2-cup servings
