This salad is hearty enough for a main dish! This salad is hearty enough for a main dish!
Number of Servings: 4


    8 oz. wild rice (2 C.)
    2 T pine nuts
    .5 C sun dried tomatoes, drained/chopped
    .5 C black olives, sliced
    .5 C marinated artichoke hearts, drained
    2 T rice vinegar
    salt, pepper, parsley to taste


Cook rice according to package directions. Toast pine nuts lightly in a dry skillet. Combine rice, nuts, and remaining ingredients and toss well.

  • This was a great dish! Could be eaten hot or cold. I added .5 cup chickpeas (garbanzo beans) for some added protein. A serving of this is VERY filling! - 9/1/12
