Number of Servings: 4

Ingredients

    3 small/small-medium sweet potatoes
1 medium sized Honey Crisp Apple (or whatever kind you like)
1.5 tbsp Earth Balance Natural Buttery Spread
    .25 cup brown sugar
    Dash of Cinnamon

Tips

Be careful of mushy potatoes. I accidentally over cooked mine and by the time they got to the skillet, they were a bit too mushy for my taste.

Directions

Cut sweet potatoes about an inch in size, boil for about 5-10 minute depending on how big the sweet potato pieces are. In a skillet put the pat of butter and melt, cut up the apple the same size as the sweet potatoes and add to the butter. Once the sweet potatoes are tender, drain and add to the butter and apple mixture. Add the brown sugar and cinnamon.
