Introduction

Two large russet potatoes will yield quite a lot of mashed potatoes... enough for 12 1/2-cup servings. This recipe is rich and creamy and great if you are not worried about the fat. Ingredients

    2 very large russet potatoes
    1/2 to 3/4 cup sour cream
    2-4 tbsp mayo (to taste)
    4 tbsp or 1/4 cup butter
    1/4 to 1/2 cup half and half (amount for desired consistency)

Directions

1. Scrub potatoes (leaving skin on) and cut into small pieces about the size of half an orange wedge doubled. Place potatoes in a pot, sprinkle with salt, and cover with water.
2. Cook on medium heat until boiling and then reduce heat and simmer for 20 minutes.
3. Drain potatoes and either leave them in the pot to mash or put them in a bowl large enough to hold the potatoes with extra room for the added ingredients and mashing.
4. Add all the ingredients except the half and half.
5. Mash the potatoes with the ingredients until well mashed and mixed.
6. Mix in half and half a little at a time until it reaches your desired consistency.
7. Serve hot
