Easy to freeze and thaw for lunch! Easy to freeze and thaw for lunch!
Number of Servings: 8

Ingredients

    1 package frozen corn
    1 or 2 cans beans (black beans, pinto)
    Brown rice or rice medley
    1 can diced tomatoes with chile peppers
    8 wheat tortillas

Directions

Mix all the ingredients. Roll them up into burritos. Freeze. Take one out and microwave for a minute for lunch!
