Ingredients

    6 large leeks, bulb and light green parts washed and cut into 1 " strips

    6 shallots

    1 cup organic vegetable broth

    1 tbsp dijon mustard

    2 tbsp coconut vinegar

    1/4 cup e.v.o.o.

    salt & pepper to taste

    2 tbsp fresh chopped parsley

    2 tbsp coconut flour

Directions

toss leeks in 1 tbsp olive oil
lightly brown on grill pan
add broth and simmer on low heat 20 min
chop 4 shallots into 1/4" rings, toss in coconut flour and cook under broiler until crispy 2-3 min

in a small bowl combine remaining shallots finely diced with mustard and vinegar, whisk in olive oil and salt and pepper

Place leeks on serving platter, drizzle with vinaigrette, sprinkle with crispy shallots and parsley

Serving Size: makes 8 small servings
