Introduction

Ingredients

    3-4 mirliton
    1 cup onion, diced small
    1-3 cloves crushed garlic
    Juice of 1/2 lemon
    olive oil 1 swirl to prevent onions from sticking
    Cajun Magic- Veggie Magic or other season salt to taste
    butter 1 tablespoon (optional)


Tips

Mirliton may be boiled ahead of time then peeled and chopped when ready to assemble casserole.
Season the onion while sweating down, then season again once all the ingredients are in pot.


Directions

Boil 3-4 mirlitons (Chayote squash, vegetable pear) in salted water until tender when pierced with a fork- like a potato. Drain and let cool.

Preheat oven to 350 degrees F
Slice mirliton in half, remove seed, Peel mirlitons and chop in 1/2 inch cubes. Chop seed in small dice.
Dice onions and crush garlic.
In medium pot heat to medium high heat, add enough olive oil to sweat down onions. Once onions are clear add chopped seeds, crushed garlic clove(s), 6 tablespoons sliced almonds, diced mirliton, and juice of 1/2 lemon. Stir over medium heat for 1-2 minutes. Add butter, and salt and pepper or Veggie Magic to taste(approx 4 dashes). Continue to cook in pot for another 5-10 minutes until all ingredients are warmed through. (optional) Transfer to an 8x8 inch casserole dish and put in oven to marry the flavors for additional 20-30 minutes.
