Found this in "Clean Eating Magazine. Smells delicious as you cook it. You can use whole grain tortilla's or buns for the meat, or put it in a salad instead of lettuce wraps. Ingredients

    Large Pork Shoulder Roast
    1 tbsp sunflower oil

    2 jalepeno peppers, chopped and seeded (depending on how much 'heat' you like'
    1 chopped green bell pepper
    2c. chopped tomatoes
    1.5 cups of chopped onions

    1/3 cup of water
    Tomato Past (2 oz)
    tsp. Cumin
    tsp allspice

    tbsp fresh ginger root
    1/2 cup apple cider vinegar
    tsp. dried cane juice

    8 large boston lettuce leaves.

Directions

heat the oil and brown the meet in a skillet, letting it sit on each side.

Chop the first group of veggies and put in the bottom of a slow cooker
add the browned roast on top.

add the water to the skillet and tomatoe paste and stir, scraping off any of the pork drippings. Pour sauce on roast in slow cooker and add cumin and allspice.

Allow roast to cook for 8 hours on low.

Turn off heat, add remaining ingredients. (The pork will shredd while stirring this together)

Let sit for 20 minutes to thicken.

Serve in lettuce Leaves.
