Introduction

A traditional Greek style pastry. A traditional Greek style pastry.

Ingredients

    1 package phyllo dough
    12 oz fine chopped walnuts
    3 oz melted butter
    3 tablespoons sugar
    1/4 teaspoon ground cardamom
    2 oz melted butter
    *****************************************
    3 cups sugar
    2 cups water
    (a few drops rose water if you have it.)

Directions

1) Layer half the phyllo dough onto an oven tray, brushing a bit of the melted butter in between each sheet of phyllo dough.
2) Mix the walnuts with the first bit of sugar and the ground cardamom. Spread this evenly over the layered phyllo dough.
3) Continue to layer the remaining phyllo dough over the walnut mixture, brushing with first amount of melted butter between each sheet of pastry.
4) Once all the pastry has been layered, cut to form 48 even sized pieces. (6X8)
5) Heat the second amount of melted butter until it is really hot, and pour this evenly over the cut pieces. (top layer will crinkle.)
6) Put the tray into a pre-heated 350'F oven and bake for between 25-30 minutes, until it becomes golden brown.
7) Meanwhile, while the pastry is baking, make your syrup using the 3 cups sugar and 2 cups water. Place both into a large sauce pan, and bring to a boil. Boil it until it reaches the syrup stage on your candy thermometer. (about 180 'F)
8) Let both the pastry and the syrup cool until they can be easily handled. Once they are cooled enough, pour the syrup over the pastry to evenly coat it. Allow it to sit for a while, and soak into the pastry.
9) Remove the pastry from the pan, and store the pastry in a nice container with a lid, between layers of plastic wrap.
