Ingredients

2 tbsp Olive Oil
1/4 medium onion, chopped
1 clove garlic, minced
1 tbsp tomato paste
1 tsp cumin, ground
1/4 tsp salt
1/4 tsp black pepper, ground
1/8 tsp cayenne pepper
2 cups broth, vegetable or chicken
1 cup red split lentils
Tips
I like to add some lemon juice sometimes to give it some tang. I'll also add chopped parsley as a topping. Enjoy!
Directions
In a medium size pot, heat olive oil in medium high heat. Add onion and garlic, saute until transluscent.
Add tomato paste, cumin, salt, pepper and cayenne pepper. Saute for about two minutes.
Stir in broth and red lentils. Bring to a simmer. Partially cover the pot and turn down heat to medium-low. Let simmer until lentils are tender, about 20 minutes. Taste and adjust seasonings according to taste.
Using a blender or food processor, puree half the soup. Add back to the pot and stir. Add a half a cup of greens if desired; stir in and let simmer another 5 minutes. Serve.
Serving Size: Makes 3- 1 cup servings.
