Introduction

Ingredients

    1 lb ground turkey (97% fat free)

    2 cans Hunts diced tomatoes
    1 can Westbrae organic black beans
    1 can Westbrae organic chili beans
    1 can Rotel diced tomatoes & chilies

    1 T olive oil
    1 onion
    10 cloves garlic

    1 lg zucchini, chopped
    1 lg yellow squash, chopped
    2 lg carrots, chopped
    Herbes de Provence, red pepper flakes, and cumin to taste.

Directions

Add chopped onion and garlic to olive oil in large stock pot. Saute til translucent.

Add ground turkey and mix thoroughly to ensure it's fully cooked.

Add and stir canned products and spices. Add chopped veggies. Heat through. Top w/shredded cheese if desired. (Not included in ingredients list or nutrition tracker.)

Makes approx. 10 8-oz servings.
