Ingredients

    1 Zucchini
    Mozzarella Shredded Cheese
    Cherry Tomatoes
    Bell Pepper
    Parmesan Cheese, Grated
    Garlic Powder

Directions

Slice a zucchini in half by length. Scoop out the middle where the seeds are (I save this and bake it on the side as well with a little sprinkle of garlic powder). Take a thin slice out of the bottom so the "boat" sits upright. Top with cheese, tomatoes, bell peppers (or any other topping that sounds fitting) and sprinkle with parmesan cheese and garlic powder. Bake at 400 degrees until cheese is melted and golden brown (should be able to easily stab zucchini with a fork). VERY filling!
