Ingredients

3/4 cup chopped onion
1 clove minced garlic
1 Tbsp olive oil
2 cup vegetable stock/broth
3/4 cup dried lentils
2 cup diced tomatoes w/juice
1/2 cup water
1/4-1/2 tsp. crushed red pepper flakes
1/2 tsp. salt
1 Tbsp fresh basil or 1 tsp. dried basil
1 Tbsp fresh oregano or 1 tsp. dried oregano
1/4 tsp. fresh ground black pepper
1-6 oz can of tuna packed in water, drained
4 4" whole wheat pitas
Directions
In a saucepan saute the onion and garlis in the olive oil for 5 minutes, until the onion is tender. Add the broth and lentils. Cover and simmer for 30 minutes. Add the tomatoes with their liquidand 1/2 cup water and the remaining ingredients. Simmer over low heat uncovered for about 45 minutes, stirring occasionally. Add more water if mixture becomes to dry. For a warm sandwich gently stir in the drained tuna. Cut the pita breads in half and stuff with the mixture. For a cold sandwich allow mixture to cool and then gently fold in the drained tuna and then stuff the halved pita breads.
