Ingredients

    Mashed Potatoes, .5 cup, russet, skin on
    Cauliflower, cooked, 0.5 cup (1" pieces)
    Spinach, frozen, .35 package (10 oz) yields
    Yogurt, plain, low fat, .4 cup (8 fl oz)
    Butter, unsalted, 1 pat (1" sq, 1/3" high

Tips

I make a large container of this and eat it for any meal.


Directions

Chop the potato into cubes and the cauliflower into 1" pieces, and steam until very soft; thaw 1/3 cup frozen spinach and squeeze, squeeze, squeeze the liquid out of it. Put all veggies, yogurt, butter in a food processor or blender and puree. Season with salt and pepper.
