Ingredients

    Pasta [any kind] 1/2 package, cooked al dente [we use spaghetti]
    Walnuts, chopped roughly, 1/8 cup
    Bacon, 2 slices, fried, crumbled
    Garlic Cloves, 3, chopped roughly
    Kale: 4 cups, torn, med size.
    S & P
    1/4 t. thyme
    1/4 c. grated parmesan


Tips

We like the flavor of garlic, so we cut up 3. You can add to taste. You can definitely use less bacon, but the nutritional info will be off.

If it's young kale, cut the stems and throw them in. Can also be made with swiss chard, cabbage, or escarole.

Although it's got a good many calories and fat, I suggest you save it for the days when you can spare those two, and give you a dish with lots of protein, fiber, AND taste!


Directions

Boil pasta until it's al dente [put back in pan after draining and spray w. Olive Oil Spray].

Meanwhile, fry bacon crisp. Remove. Crumble. Set aside. Add to hot bacon grease, walnuts...cook until browned, remove.

Add garlic, kale, and spices to same pan. Cover pan until greens wilt, around 3-4 mins., stirring a couple times.

Mix pasta with kale mixture and cheese. Sprinkle with crumbled bacon and nuts and serve!

Serving Size: makes 4 servings
