Introduction

Ingredients

1 Tbsp. oil
2 c. coursely chopped cabbage (1 sm. head)
1 chopped onion
2 cloves minced garlic--I use pre-minced
.5 tsp. red pepper flakes
.25 tsp dried thyme
.5 tsp. curry powder
1 14 oz. can of diced tomatoes
1 c. water/broth
2 Tbsp. peanut butter
2 diced and peeled sweet potatoes
1.5 c. rutabaga --if frozen is available, I'll use the bag
1 c. sliced carrot
1 c. chickpeas--I toss in a can, drained
2 c. cooked millet to serve the stew upon
Tips
If you are using a pressure cooker, the stew is ready in about 6-8 minutes after reaching pressure.
I will cook this on the weekend and then have it throughout the week for lunch. It only gets better throughout the week.
Directions
Chop cabbage and cook in tablespoon oil until soft and all other ingredients, chopping first, the vegetables. Cook covered for about 40 minutes.
You can serve the stew over millet, or you can just have it without.
