Introduction

Number of Servings: 10

Ingredients

    1 16 oz. bag yellow split peas, rinsed
    1 diced zucchini
    2 14.5 oz cans,no salt added diced tomatos with juice
    1 head escarole, chopped
    3 stalks celery, diced finely
    1 Italian pepper, diced finely
    1 to 2 jalipiano peppers, diced finely
    1 large carrot, shaved with a peeler
    2 to 3 32 oz low sodium chicken broth, (Pacific organic is the best.)
    2 to 3 cloves garlic, minced
    2 tablespoons basil
    2 tablesppons parsley

Directions

Add broth and split peas to soup pot and turner burner to high. Bring to boil while adding rest of ingredients. Let boil for about 15 minutes and turn to medium heat. Let simmer for about 20 to 30 minutes. Makes about 10 servings.
