Ingredients

    Onions
    Carrots
    Garlic
    Stock
    Tin of tomatoes
    Basil
    Parsley
    Spinach
    Parmesan

Tips

Serve with homemade brown bread


Directions

Chop onion, carrots and garlic. Put in to a saucepan and add the 750ml of Stock. Add the tinned tomatoes and cook on a medium heat until the carrots are cooked (15-20minutes) Add your spinach at the end and whizz up in a food processor. Add your herbs and grate the parmesan in with a veggie peeler and serve - Delish!! :)
