Introduction

Number of Servings: 16

Ingredients

    Whole Wheat Cake mix (enough for three batches of muffins):
    6 C Whole Wheat Pastry flour
    3 1/2 C sugar
    1 C Splenda
    3 3/4 t baking soda
    1 C Powdered Milk
    1 1/2 C cocoa
    3 t salt.

    To make muffins:
    1 Bag of Whole Wheat cake mix
    1 15 oz can pumpkin
    2/3 C water
    1/4 C Canola oil
    1 C chocolate chips

Directions

Combine the ingredients for the mix and set aside into three resealable bags with 4 C of the mix in each bag.

Preheat oven to 350. Blend the oil, water, and pumpkin together. Add the mix. If too thick, add a tiny bit more water. Stir in chocolate chips and separate into muffin tins. Bake for 30-35 minutes. Makes approximately 16 muffins when using a 1/4 C scoop to dispense.
