Introduction

Ingredients

    CHICKEN:
    1 pound chicken meat

    ORZO:
    6 cups water
    1/2 lb orzo pasta
    3/4 teaspoon salt

    SOUP:
    9 tablespoons flour
    5 tablespoons margarine or butter
    11 1/2 cups water
    4 1/2 tablespoons chicken base
    1/2 cup lemon juice
    1/2 tablespoons lemon zest
    1/2 teaspoon salt
    1/4 teaspoon white pepper
    6 eggs (1 1/4 cup)

Tips

I like to use extra homemade gravy and stock from when we roast chickens (or turkey) which reduces the sodium content from the bouillon.


Directions

Cook chicken meat if needed; cut into bite size pieces.

Cook orzo in a pot for ~10 minutes, strain, and cool in cold water, drain.

In a large pot, melt butter and whisk in flour; cook for 5 minutes on medium heat.

Add soup ingredients except eggs to pot and bring to a boil; simmer for 15 minutes.

Crack eggs into a bowl; slowly add 2 cups of the soup to the bowl and whisk to combine. Slowly add back to the pot, stirring.

Add chicken and orzo to soup. Season to taste.
