Introduction

A really great chili for people who like "not so thick" chili. This is more like minestrone soup....an old family recipe. A really great chili for people who like "not so thick" chili. This is more like minestrone soup....an old family recipe.

Ingredients

    1 cup raw celery, diced
1 cup raw onion white or yellow, diced
1 cup raw green pepper, diced
2 15oz (approx) cans of diced tomatoes
2 15 oz cans of kidney beans rinsed and drained
    1 lb lean ground beef
2 TBSP chili powder (or more to taste)
    1-2 tsp salt
    45 oz water

Tips

Try to use fresh chili powder. The fresher the chili powder the stronger taste. The longer this sits in the slow cooker, the better it gets.

Directions

Prep celery, onion and green peppers. Brown beef approximately 1/2 way through on COOK function of your slow cooker. If you don't have a cook function on your slow cooker, you can do this part in a skillet. After beef is cooked ABOUT 1/2 way through, add 1 teaspoon of salt and the celery onion and peppers. Cook meat and vegetables until the vegetables are tender, about 15 minutes. Add kidney beans, diced tomatoes, chili powder and the water. Simmer on low setting of slow cooker no less than 1 1/2-2hrs. Adjust chili powder to your desired taste.
