Ingredients

DRESSING
3 T. hoisin sauce
2 T. peanut butter
2 t. brown sugar
1 t. hot chili oil or 3/4 t. asian chili paste
1 t. freshly grated ginger
3 T. seasoned rice vinegar
1 T. asian sesame oil
salt to taste
SALAD
4 cups shredded cabbage
2 scallions
1/2 cup Philippine-style noodles or Chun King noodles
1 boneless skinless chicken breast
2 T. soy sauce
1 t. grated ginger
cilantro to taste if you like it.
Directions
Makes 4 servings. Slice chicken into long thin slices. Put all chicken, 2T. of soy sauce into a non-stick pan. Stir chicken until cooked through. When the chicken is almost done, add the grated ginger and mix in. Whisk all dressing ingredients together in a bowl. Shred cabbage or use pre-shredded. Chop scallion and cilantro finely. Add noodles straight from the package. Toss all ingredients together. You can also add shredded carrots if you like.
