Ingredients

    Salad

    1 - 15 oz can of Black Beans
    1 - 15 oz can of Great Northern Beans
    1 - 15 oz can of Black Eyed Peas
    1 - 15 oz can Corn (or 2 cups frozen corn)
    2 cups Tomato (diced fine)
    1/3 cup Cilantro coarsely chopped (or to taste)

    Dressing

    3/4 cup Canola Oil
    1/4 cup white Vinegar
    1 Jalapeno seeded and chopped fine
    1 Tbsp Minced Garlic
    2 tsp coarsely ground Pepper (or to taste)
    2 tsp ground chili or cayenne pepper
    1 - 2 tsp Cumin (to taste)




Tips

Navy Beans can be substituted for Great Northern if available.


Directions

Drain and rinse all beans and corn and place in large bowl. Add tomatoes and Cilantro.

Mix Dressing ingredients and blend well using whisk. Pour over bean mixture and gently blend without smashing beans. Best of chilled before serving.
