Introduction
Italian Wedding Soup is one of my favorites soups, so taking it Primal was a must. Contrary to what the name implies, the "wedding" refers to the marrying of the flavors of green vegetables and meat. Ingredients

Onions, raw, 1 small
Ground beef, lean, 4 oz
Italian Sausage Ground Sausage 2 oz
Egg, fresh, 1 large, lightly beaten
Almond flour, 1/4 cup
Dried Basil, 1 tsp
Onion powder, 1/2 tsp
Chicken Broth, 5 3/4 cup
Spinach, fresh, 2 cup, chopped
Cauliflower florets, raw, 1 cup
Carrots, raw, 1/3 cup, chopped
Parmesan Cheese, grated, 1/4 cup
Black pepper, to taste
Optional: Shredded Italian cheese blend
Directions
1. In medium bowl combine, meat, egg, almond flour, parmesan cheese, onion, basil & onion powder; shape into 3/4" balls.
2. In large sauce pan, heat broth to boiling; stir in spinach, cauliflower florets, carrot & meatballs.
3. Return to boil; reduce heat to medium.
4. Cook at slow boil for 10 minutes or until cauliflower is tender.
5. Stir frequently to avoid sticking.
6. Serve with black pepper and additional Parmesan/Italian cheese sprinkled on top.
