Ingredients

    4 stalks celery (chopped)
    5 cloves garlic, pressed
    2 red/yellow or green bell peppers, chopped
    3 vegan sausages sliced in rounds and halved
    1 cup white rice, uncooked
    1 can diced tomatoes, drained
    2 cups vegetable broth
    1 Tbsp Creole Seasoning (not listed above: see http://homecooking.about.com/od/spicerecipes/r/blspice14.htm to make your own)

Tips

use cooked white rice with this recipe to use up leftovers; add 2 cups rice and 3/4 cup water with chicken/vegetable boullion


Directions

In large pot heat oil, saute
Celery (chopped), garlic, bell peppers, chopped and vegan sausages sliced in rounds; cook until vegetables are softened

Add 1 cups rice, uncooked, tomatoes drained, vegetable broth and 1 Tbsp Creole Seasoning (not listed above: see http://homecooking.about.com/od/spicerecipes/r/blspice14.htm to make your own)

Cook 30 min until rice is soft

Salt & pepper to taste

Serving Size: 5 dinner size servings or 8 1 cup servings
