Ingredients

    3 cans tuna fish, drained (reserve liquid)
    1/3 cup green pepper, chopped
    1/3 cup onion, chopped
    1/2 cup Country Crock Margarine
    1/2 cup flour
    4 - 5 cups 2% milk (add the reserve tuna liquid to the amount of milk)
    1 2/3 Tbsp lemon juice

    FOR SWIRLS:
    2 1/4 cup biscuit mix
    2/3 cup 2% milk
    1/2 cup shredded cheddar cheese
    2 Tbsp dried parsley

Directions

1. Preheat oven to 400°

2. In a saucepan, sauté onion and green pepper in butter over medium heat until the onion is translucent. Blend in flour until smooth. Gradually stir in milk; bring to a boil over medium heat. Cook and stir for 2 minutes. Remove from the heat; stir in tuna and lemon juice. Pour into an ungreased 13" x 9" x 2" baking dish.


3. For dough, combine biscuit mix and milk until blended. On a lightly floured surface, roll dough into a 12" x 9" rectangle. Sprinkle with cheese and parsley. Roll up, jelly-roll style, starting with a long side. Cut into 1" slices; place over tuna mixture. Bake, uncovered, at 400° for 20-25 minutes or until top is lightly browned.


4. Allow to cool for 5 minutes before serving.

Makes 8 - 1 cup servings (two biscuit swirls plus the Tuna Bake)
