A slight twist to Red Beans & Rice--made in a Rice Cooker! A slight twist to Red Beans & Rice--made in a Rice Cooker!
Number of Servings: 6

Ingredients

    2 Cups Long Grain Basmatic Rice
    1 Red pepper, diced
    1 medium onion, diced
    3/4 cup of celery, chopped
    1 can, red kidney beans (drained & rinsed)
    3 cups Fat Free/Low Sodium Chicken Broth
    2 links, Chorizo Sausage, chopped into small pieces (can substitute, vegetarian)
    2 bay leaves (whole)
    1 tsp hot sauce or tabasco (add more to taste)
    1 tsp worstershire sauce
    Red Pepper or Chipotle pepper flakes (quantity should be to your taste)

Directions

This recipe is made in a rice cooker. I have a Wolfgang Puck one, which I use for this recipe. Please check your machine and adjust the rice & liquid quantities to your rice cooker. The machine you are using will determine the amount of time this recipe will take.

You can make this in a slow cooker, but again you will need to adjust it for your own machine.

1. Soak & Rinse Rice. (You can skip this step if you're busy. I do all the time and it still comes out great.)
2. Combine all ingredients in rice cooker.
3. Cook til rice cooker says indicates your food is done.
4. Open & serve.

Serves 6 people with generous portions. This recipe can easily be adjusted by adding more or less spice. Substitute a smoked mild sausage for the chorizo for less heat.
