Ingredients

    Garlic, 2-5 cloves (by taste)
    Extra Virgin Olive Oil, 1 Tbsp
    Chicken Broth, 6 cup
    Mushrooms, 1 can
    Lemon Juice (or Lime), 4 Tbsp or 1/4 cup
    Barley, 1 cup
    Water, 2 cup
    Spinach, 1 bunch

Tips

Barley can soak overnight, which reduces overall simmer time to about 15 minutes. Very adjustable soup/soup base, and quite low-calorie/fat.


Directions

Rinse barley & set aside. Wash until water runs clear.

In large soup pot, heat olive oil and add chopped garlic, allow to cook until slightly browned. If desired, chop mushrooms & cook with garlic to increase garlic intensity. Otherwise, just toss all ingredients in EXCEPT for the spinach. Save spinach for last.

Bring to a boil and reduce heat. Allow soup to simmer together for about 40 minutes (until barley is cooked or nearly cooked) and add spinach. Cook an additional 5-10 minutes, until spinach has wilted, then serve.

Serving Size: Makes 6 servings, approximately 1 1/2 cups each.
