Introduction

Ingredients

    green cabbage
    red cabbage
    carrot
    granny smith apple
    brown mustard
    light brown sugar
    pickle relish
    salt
    pepper
    almond slices
    greek yogurt
    apple cider vinegar - raw
    organic raisins (don't eat raisins with sulphur dioxide as a preservative)

Tips

Great additions are: dried cranberries, celery & anything else you like. Dried cranberries are surprisingly high in sugar/calories, though. Avoid raisins with sulphur dioxide if possible (it interferes w/absorption of nutrients). Go organic when & were you can. If you don't think you will consume the whole batch, just mix wet & dry in the amounts you want, that way it wont' get overly soggy.


Directions

Combine shredded red & green cabbage with chopped, diced or sliced apple. Grate the lemon zest into the bowl the wet ingredients will go in. Juice the lemon itself into the bowl of dry ingredients & toss to keep the apples nice & bright. Toast the almonds (or have raw if you prefer) lightly while you do the rest. Combine the wet ingredients plus the light brown sugar & whisk or mix together to make a wet dressing. Salt, pepper & a grind of nutmeg to taste.
