Ingredients

    2 Tblsp EVOO
    1 cup chopped celery
    3 cups diced onion
    2-8 oz pkgs sliced mushrooms
    1 1/2 cups diced sweet peppers
    5 cups diced roma tomatoes
    2 tsp garlic powder
    2 tsp dried oregano
    1 tsp dried thyme
    4 tsp dried basil
    2 tsp salt
    1 tsp pepper
    1 tsp crushed red pepper flakes
    1 1/2 Tblsp tomatoe paste
    5 cups water

Directions

Heat oil in pot. Add all ingredients except for paste and water. Saute over medium heat til vegies are very tender. Add paste and cook for an additional 2-3 minutes over medium heat stirring constantly. Add 2 cups of water and then use a hand blender to blend ingredients. After blended add remaining water and simmer over low heat for an additional 30 minutes to an hour.
