Ingredients for Meat Mixture:
Turkey, Ground turkey, 93% lean, 16 oz
All Natural Original PAM No Stick Cooking Spray, 0.27 gram(s)
Cinnamon, ground, 1/2 tsp
Onions, raw, 1 medium (2-1/2" dia) chopped
Garlic, 3 cloves
Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2" chopped
1 Garden - Pepper, Chili Green, chopped
Oregano, ground, 1 tsp
Bullion - Chicken - Wyler's x 1 Cube
Tomato Paste, 3 Tbsp
Swanson Chicken Broth 99% Fat Free, 1.5 cup
Cheese Sauce Mixture:
Smart Balance Light Buttery Spread, 2 Tbsp
Wheat flour, white, bread, enriched, 1 1/2 Tbsp
Horizon Organic Fat Free Milk, 1 cup
Nutmeg, ground, 1/4 tsp
Cheese-Kraft Shredded Parmesan, Romano & Asiago, 1/4 cup
Salt and Pepper to taste
Tips
Serve on a mini pita and add a side of baked chips.
Directions
In a large skillet over medium heat coat non stick pan with cooking spray. Add in onions, garlic, peppers, cinnamon, oregano, and bullion cube and saute for 1 minute until bullion cube is melted. Add ground turkey and cook 5 minutes until browned. Stir in tomato paste and chicken broth and let simmer for 10 minutes to allow sauce to reduce. In a sauce pan add smart balance and melt over medium heat. Add in flours, and in a little ground pepper. Whisk in milk and nutmeg to remove any lumps. Once sauce starts to thicken and cheese and turn off heat. Serve over a mini pita open faced with 1/4 meat mixture and 1/4 cheese sauce mixture. The bread adds extra calories so make sure you count those.
