Introduction
This is a recipe that I have made to replace the sugar with Swerve. It doesn't rise like an Angel Food Cake but has a fairly good flavor and will go well with berries and even a fat free/sugar free chocolate sauce. Ingredients

1 cup of cake flour
1 1/2 cups of Swerve
9 egg whites
1/4 tsp. salt
1 tsp cream of tartar
1 tsp vanilla extract
1/2 tsp almond extract
Tips
Swerve is a sugar substitute that can be found at Whole Foods market. It is Erythritol and does have some carbohydrates but no calories and is diabetic safe.
Directions
Preheat oven to 325 degrees F.
1. Sift cake flour with 1/2 cup of Swerve
2. Sift remaining swerve to make sure there are no lumps and set aside.
3. Put room temp egg whites in a mixing bowl and mix on high with wisk until foamy.
4. Add salt and cream of tartar and mix until soft peaks form.
5. Slowly add remaining swerve, vanilla extract and almond extract and mix until stiff peaks form.
6. Slowly fold in the flour/swerve mixture.
7. Put in an ungreased parchment lined tube pan (not one with ridged sides) and bake for 45 minutes to 1 hour.
