Ingredients

    La Victoria Enchilada Sauce, .75 cup (remove)
    El Pollo Loco, 6 inch corn tortilla, 6.75 serving (remove)
    rosarita refried beans, vegetarian, 1 cup (remove)
    *Kroger Lowfat Cottage Cheese, 0.5 cup (remove)
    Mori-Nu, Tofu, silken, soft, 1 slice (remove)
    Cheddar Cheese, .5 cup, shredded (remove)

Tips

Cut tortillas in half and align cut sides along the edges of an 8x8 pan. The .75 additional tortilla is used to fill the gap in the center.


Directions

Mix silken tofu and cottage cheese. Then, make 2 layers, lasagna style, in the following order: enchilada sauce, tortillas, beans, cottage cheese mixture, cheddar cheese. Top with a final layer of tortillas, enchilada sauce and shredded cheddar.
