Introduction

Ingredients

    1 yellow squash, cut into thick strips
    1 green pepper, cut into strips
    2 cups fresh green beans, ends snapped
    1 large onion, cut into chunks
    12-15 baby carrots
    12-15 cherry or grape tomatoes
    1 tbsp extra virgin olive oil
    3 tbsp balsamic vinegar
    1 tsp coarse salt


Directions

Place all vegetables in a shallow baking pan lined with non-stick foil. Drizzle with olive oil and sprinkle with salt; stir to coat. Drizzle vinegar over vegetables.

Cover with foil and roast at 400 degrees 35-45 minutes (remove foil last 5-10 minutes).
