Ingredients

Chop 1 cup of each of the following vegetables, approximately one whole of each except about 5-6 mushrooms:
-green pepper
-red pepper
-onion
-mushrooms
-zucchini
-carrot (cut very small for even cooking)
1 Tbsp canola oil
1 650-ml jar of Classico tomato-basil pasta sauce
approximately 2 cups of water
Fresh ground pepper to taste, if desired
Tips
Add TVP if you wish to boost the protein content.
Serving yield is approximate, I measured the whole batch after adding the sauce and water but before simmering (covered).
Directions
Saute the vegetables in oil until soft.
Stir in pasta sauce. Use water to get all the sauce from the jar.
Simmer up to an hour and serve over your favorite pasta.
