Introduction

Wonderful low carb & gluten free treat! Wonderful low carb & gluten free treat!
Number of Servings: 18

Ingredients

    6 eggs
    0.25 Canola oil
    0.25 cup non-fat milk
    6 Tbsp honey
    0.5 tsp salt
    0.5 tsp vanilla
    4 packets of True Lemon (crystallized lemon)
    0.5 cup coconut flour
    0.5 tsp baking powder
    1.5 cup fresh strawberries, sliced

Directions

preheat oven to 400 degrees.

Spray muffin tins lightly with non-stick spray.

Mix together eggs, oil, milk, honey, salt, vanilla, & true lemon. Add coconut flour & baking powder and mix until there are no lumps. Fold in the strawberries.

Divide among 18 muffin tins (I use silicone without wrappers and they are fine).

Bake for 15 -20 minutes until done.
