Ingredients

    1/2 Cup Fresh Spinach (1 leaf set to side)
    1/4 Cup Raw Onion, chopped
    1 tsp. Raw Garlic, Chopped
    1/2 Cubic Inch Feta Cheese
    1 thin slice of tomato
    1 Extra Large Whole Egg
    1 Egg White
    1 Thomas' English Muffin
    1 Banquet Turkey Sausage Patty OR 1 slice Canadian Bacon if preferred


Directions

Make sure you have a medium skillet and mixing bowl handy.

1. Scramble one whole egg and one egg white in a mixing bowl.
2. Mix in 1/2 cup fresh spinach (leave one leaf to the side), 1 tsp chopped garlic, 1/4 cup chopped onions, and 1/2 inch block of feta cheese while crumbling with fingers. Add salt and pepper to taste.
3. Place skillet on medium flame and spray with PAM cooking spray so the omelette will not stick.
4. Pour egg mixture into skillet and when the edges of the egg start to solidify, flip one half over the other. After about 30 seconds, flip the entire omelette, now folded in half over to its other side. Press down with spatula to make sure the middle is cooked thoroughly. When it is cooked, remove and place on plate.
5. Heat the Turkey Sausage Patty as instructions show (NOTE: You can also use a Canadian Bacon slice, just make sure it is 50 calories or less!)
6. Slice English Muffin in half, toast if preferred.
7. Place tomato, spinach leaf, turkey sausage patty, and about 1/3 of the omelette between muffin. Enjoy your sandwich with 2/3 of the remainder of the omelette on the side!
