this is quickly becoming a family favorite...my whole family loves it! this is quickly becoming a family favorite...my whole family loves it!

Ingredients

    combine 3 cups cooked brown rice and 1 can mild green enchilada sauce. lay on the bottome of a 9X13 pan.

    next. saute onions and green peppers until soft in a non-stick pan. add 1 cup salsa, 1 1/4 cup cooked chicken breast and one can drained black beans. Mix thouroughly. Spread evenly over the rice mixture.

    last. dot the casserole with the 1 cup reduced fat sour cream. sprinkle with the 1 1/4 cup finely shredded mexican cheese. Decorate with sliced black olives and fresh clinatro.

    Bake covered at 350 degrees for 30 minutes. Uncover and bake an additional 15 minutes.
