Introduction

Number of Servings: 4

Ingredients

    1 - Small apple chopped
    1 - banana
    1 - packet of instant oatmeal or 2 oz. of regular oatmeal cooked.
    1 - tsp of olive oil
    2 - large eggs
    1 - dash of salt

Tips

Substitute applesauce for the chopped apple if desired.

Using instant oatmeal means that the oatmeal does not have to be pre-cooked.


Directions

Combine the eggs, banana, oil, salt and chopped apple to a food processor and blend until smooth.

If using instant oatmeal, add the packet to the food processor or if using regular oatmeal cook it in the microwave for a minute or so then add to the food processor.

Blend in the oatmeal until smooth.

Use low-medium heat in a non-stick pan or griddle and cook until golden brown.


Serving Size: Makes 4 pancakes (approximately 4" in diameter).
