Ingredients

1 Firm mango, sliced
1 Beef steak tomato sliced
half red onion sliced into rings
1 medium cucumber peeled and thinly sliced
2tbsp olive oil
1 tbsp lemon juice
1 garlic clove crushed
1/s tsp hot pepper sauce
dash/pinch of salt
pinch of ground black pepper
snipped chives to garnish
a pinch of sugar or 1/2 tsp of honey can be added to the dressing if it is not sweet enough for you. I have not included this in the calorie count.
Tips
This salad is a Caribbean recipe and makes a great accompaniment to many dishes as well as a delicious starter.
Directions
1. On a large serving place, first arrange the sliced beef steak tomato, then the cucumber, then the mango and lastly the sliced onion rings. on a large plate.
2. Blend the oil, lemon juice, garlic, hot pepper sauce, salt and black pepper in a blender or a small jar and shake vigorously; (you may also add a pinch of sugar or a half teaspoon of honey if desired) to taste and mix again.
3. Pour the dressing over the salad and garnish with the snipped chives. Served chilled or at room temperature
