Introduction

I love curry and I love fish. So I decided to merge the two passions together and came up with this dish.

*Next time I'll be adding more fish, tomatoes and carrots and less fish sauce and potatoes (will revise this recipe after I make another batch of curry)

Ingredients

    Thai curry paste, grape seed oil, coconut milk, coconut cream, carrots, potatoes, fish sauce, cream dory, shrimp, red tomatoes, chicken broth, water

    optional: finger chili, squid

Tips

*I like my curry extra creamy so I use coconut cream. If you want normal curry, just use 400grams of coconut milk.




Directions

1. Fry curry paste in oil for one minute on medium heat
2. Turn down the heat and add coconut cream and/or milk
3. Put in carrots, potatoes and tomatoes
4. (Optional) Add a de-seeded finger chili
5. Simmer for 20 minutes
6. Stir in fish sauce, chicken broth and water
7. Add fish and shrimp
8. (Optional) Add squid

Serving Size: Makes 6 servings of curry
